Where it began
Six years, three cafés, one lesson
Long before Puerto Aventuras, there was Ahmedabad. From 2014 to 2020, our founder Shiv Patel built and ran Mocha — three cafés, in Western part of India Ahmedabad-Bodakdev, on CG Road, and in Gandhinagar — the kind of places people came back to again and again. Those six years taught him what hospitality really is: not just good food, but a room that makes you feel at home, quality that holds steady through the busiest rush, and strangers who walk out as regulars.
The gap on the water
A whole community, and no Indian kitchen
Years later and half a world away, Shiv found himself on a marina in Puerto Aventuras ringed by Italian trattorias, hugged by the Caribbean, and without a single Indian kitchen for miles. Where others saw a quiet gap, he saw a story waiting to be told: a whole community that had never tasted a proper tandoor char, a real butter chicken, or a curry built on the morning’s catch.
The chef
He knew exactly who to call
Years earlier, in those Mocha kitchens, a young chef named Pavankumar Shirwas had cooked by Shiv’s side a talent he never forgot. When it came time to build Marina Masala, there was only ever one chef in mind. Chef Pavan crossed the world to lead our tandoor, and a partnership that started over coffee in Ahmedabad found its second home on the water in Mexico.
What we serve
Where two worlds meet
We take the local catch — snapper, grouper, mahi-mahi, lobster — and give it the soul of an Indian kitchen. We keep the menu short so we can keep it honest, cooking everything to order over tandoor fire. And at the bar, we fold Indian flavour into the agave country we now call home, because the margarita is always meant to meet masala.
